If we talk about Andorran gastronomy, the escudella is a dish that should undoubtedly be mentioned due to its cultural relevance. You can taste it in multiple bordes in the Principality, but here we teach you how to make it, do you dare?

Ingredients (for 2 people):

- Beef, veal, and pork bones

- Half a celery

- Half an onion

- 1 carrot

- 2 potatoes

- 60 g of white beans

- 60 g of chickpeas

- 50g of noodles

- 50 g of white sausage

- 50 g of black sausage

- 75 g of bacon

- 100g beef

- 1 chicken thigh


1) Soak the chickpeas and beans the night before

2) Boil the onion, celery and carrot cut into large cubes.

3) Add the chickpeas, the beans and the bones.

4) Chop the meat (except the sausages) and add to the pot.

5) Let it boil for 2 hours

6) Add the salt and the sliced ​​sausages.

7) Let it boil 20 minutes

8) Add the potatoes and noodles

9) Let it boil 20 minutes.

10) Let it rest for 5 minutes.

Before serving remove the bones and the celery.
